Ingredients:  
2 c cooked rice (chilled)
1 small can deveined shrimp
1 c ham, slivered
1/2 c finely chopped celery
2 hard boiled eggs, chopped
1/4 c minced fresh chives
1/4 c minced fresh parsley
2 T vegetable oil
2 T red wine vinegar
1/2 c mayonnaise
salt and pepper to taste

Directions:
Directions:
Prepare rice and chill. Mix mayo, vinegar, and oil and pour over rice. Add the rest of the ingredients and chill. Makes a good filling for stuffed tomatoes.
