"When I'm at a Chinese restaurant having a hard time with chopsticks, I always hope that there's a Chinese kid at an American restaurant somewhere who's struggling mightily with a fork."--Rick Budinich
2 Tbsp. cream of tartar 1 Tbsp. baking soda 1 Tbsp. cornstarch
Mix all ingredients well together. Use 1 tsp. of this mixture for each teaspoon of Royal or single-acting baking powder called for in a recipe. (Do not use when double-acting baking powder is called for. This is just a substitute in case you do not have baking powder on hand.
