1 Pkg.(1#) Dried Pinto Beans

8 slices Bacon
1/4 c. onion
1/4 c. green pepper
1 clove garlic
1 tsp. salt
1 tsp. chili powder
1 1 /4 c. cheddar cheese

Directions:
Wash beans. Turn into a large salad bowl; cover with 6 cups cold water. Refrigerate, covered overnite. Next day turn beans and liquid into a large saucepan. Bring to boiling; reduce heat, simmer, covered aboout 1 1/2 hours or until tender. Drain beans, reserving liquid. Add water to liquid if necessary to make 1 cup. In large skillet saute bacon until crisp. Drain on paper towels and crumble. Reserve 2 tbsp.of bacon fat. In bacon drippings in a skillet saute the chopped onion and chopped green pepper, and garlic until tender--about 5 mins. With wooden spoon stir in beans, bacon & salt, chili powder. Cook over medium heat, stirring in reserved bean liquid a little at a time and mashing beans until creamy. Turn into serving dish. Sprinkle with chopped green pepper, reserved bacon and shredded cheese.
