Assorted tomatoes of different sizes, shapes and colors to make the number of servings required
Sea Salt
Fresh Oregano or Basil to taste or a small amount of dried herbs of your choice
Garlic, peeled and minced
Pablano pepper or fresh chile of your choice, chopped
Olive Oil
Balsamic vinegar
Pepper

Cut cherry or grape tomatoes in half; slice plum tomatoes; and chunk regular sized tomatoes and place in a colander. Sprinkle with salt. Toss them and season with some more salt. Gently toss again. Let stand and drain for about 20 minutes. The salt will draw out the juice. Discard the juice. Put the tomatoes in a bowl. Make the dressing using one part vinegar to 3 parts oil. Add the garlic, chile, herbs and pepper. Pour over tomatoes and serve.
