3 boneless chicken breast (cut into pieces)
1 bell pepper (chopped)
3 cloves garlic (chopped)
1 can diced tomatoes
1 can tomato paste
2 c chicken broth
2 c peni noodles (uncooked)
red or white wine
salt and pepper
2 T olive oil
parmesan cheese (grated)

Directions:
Directions:
Add olive oil to large skillet and get it hot. Add the chicken pieces, garlic and bell peppers to the skillet and cook until chicken starts to brown.
After the chicken is browned, add the tomatoes, chicken broth, noodles and about a cup or so of the wine to the pan and stir together. simmer until noodles are soft. After the noodles are done, add the tomato paste and stir (if the sauce is to thick, add more wine if you haven't drank it all while cooking). Simmer for about 10 more minutes. Stir frequently.
