2 tbsp olive oil,
1 lg. onion-chopped,
4 cloves garlic-minced,
4 half chicken breasts-cooked & chopped,
3 (14 1/2 oz.) cans chicken broth,
2-4 oz. cans green chile peppers, chopped,
1 tsp. cumin,
1 tsp oregano,
3/4 tsp. cayenne pepper,
5 cans (14.5 oz) great northern beans, do not drain,
1 c. shredded Monterey Jack cheese

Directions:
Directions:
Saute onion & garlic in oil in lg. soup pot over medium heat for 10 minutes or til onions are tender. Add chicken, broth, peppers, cumin, oregano & cayenne pepper & bring to a boil. Reduce heat to low & add the beans. Simmer for 20-30 min, or til heated through. Pour into individual bowls & top with a sprinkle of shredded cheese.
