2 pounds 93% lean Hamburger
1/2 pound plain ground pork
1/4-1/2 cup chopped onion
2- 3 eggs
1 to 2 cups whole milk
2-3 cups crushed saltine crackers
1/2 tsp. seasoned salt
1 tsp.sallt
1/2 tsp. garlic powder
1/2 tsp. hamburger seasoning salt
1/4 tsp. pepper

Mix ground beef and ground pork together and add eggs, mix again. Add 1 cup milk and blend in onions and spices. Begin to add crushed crackers and blend together with the first cup of milk. As you add crackers, add milk to the mix until it is somewhat stiff but well blended. Use an ice cream scoop to portion out the mixture and then hand-form the meatballs. If they start to slump add a few more cracker crumbs.
Brown the meatballs on all sides in a non-stick pan with about a 1/2 inch of vegetable oil. Once browned, place in a crock pot, then make gravy using the drippings from the meat. I use a flour based gravy mix and if needed supplement with a packaged brown gravy mix or add broth (canned or cubes).
Start out with the crock pot on high and reduce heat to low after about an hour. You may have to thicken the gravy before serving with either a corn starch or flour based thickening mixture.
