4 large eggs
2 lbs Ricotta
1 lb grated mozzarella
1 ˝ c grated parmesan cheese
˝ tbs parsley
1 box of extra large shells

Directions:
Directions:

Shell Preparation:
Boil water for shells and cook shells until Al dente ( be sure not to overcook since shells will cook more in oven) set aside to cool
Mix eggs, ricotta, mozzarella, 1 cup parmesan cheese, parsley in mixer until creamy
Using tablespoon stuff 2 tablespoon full into shells and place face (opening ) down in a baking dish
Sprinkle remaining grated cheese over all shells and top with basic tomato sauce ( recipe to follow )
Bake in oven at 350 for 30-45 minutes

Makes 40- 48 Wear your stretch pants so you don’t explode from eating all the shells…
