3 lbs. stew beef
2 c diced onion
2 c quartered potatoes
2 c carrots, cut in chunks
2 c celery, cut in large sections
1 (6 oz.) can sliced mushrooms
2 tsp. salt
1/2 tsp. pepper
5 T flour
1 tsp. sugar
3-4 cups V-8 juice
3/4 cup burgundy or heavy, dark wine

Place all ingredients, in the order given, in a roaster with tight fitting lid. Bake for 5 hours at 250º. No browning needed. More liquid makes it richer and thicker.

I use less meat and more vegetables than the recipe calls for. Also, I bake it at 300-325.
