1-1 1/2 lbs of your favorite white fish(tilapia,cod or Swai)
1 8 oz. can of diced tomatos
1 large vidalia or purple onion
capers
green stuffed olives
2 cloves of garlic
bunch of fresh parsley

Directions:
Directions:
In a saute pan, saute sliced onion on low heat for approx. 30 min. so onion sweats and ultimately carmelizes.. Half way through process, add garlic and saute together.
Now, in a caserole, lightly grease bottom with spray oil and add raw fish to pan.
In another small pan, heat tomato sauce with some salt, pepper and oregano and basil-(15 min)
Once onions have carmelized, smother fish fillets with it and then add tomato sauce on top. On top of the sauce and carmelized onions, add capers and green olives liberally. Now bake for approx. 15 min. Voila! Serve with rice and your favorite veg. or simply a salad.
