3 c. grated zucchini squash
3 eggs
2 c. sugar
1 cup oil, vegetable or olive
2 T. vanilla
3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 c. raisins (optional)
1 1/2 c. chopped nuts
1 1/2 c. cocoanut (optional)

Directions:
Directions:
Beat sugar and eggs, together. Add oil and vanilla, Add the rest of ingredients, then squash, nuts, raisins, and cocoanut. Bake at 350 for 1 hour or until done. Makes 2 loaves. Bake in well-greased bread pans.
