Ingredients:  
1 1/2 lb. of boneless chicken cut up into 1 1/2 pieces
1 medium onion, chopped
1 medium green pepper, chopped
1/2 tsp. paprika
1/4 tsp. pepper
1/4 tsp. ground red pepper
2 (15oz.) cans of stewed tomatoes
1/2 tsp. oregano leaves
1 (15 oz.) can corn, undrained
1 clove of garlic, minced or 1/2 tsp. garlic powder
Hot sauce to taste

Directions:
Directions:
Saute chopped green pepper, onion and garlic in a coated saucepan with olive oil. Drain. In same saucepan saute cut up chicken with 1 to 2 tsp of olive oil, until no longer pink. Add all ingredients together and simmer for 20-30 minutes-low heat. Serve in bowls over hot cooked rice.
