4 tbsp of lemon zest
2/3 cup of lemon juice
4 tsp ginger-peeled and minced
4 tsp light brown sugar
1 tbsp of peanut oil
1tbsp salt
4 dried Sichuan chile peppers-(or other dried asian peppers-seeds removed)
3 lbs. of chicken thighs-(boneless and skinless)
veg. oil for grilling

Directions:
Combine lemon zest, lemon juice, ginger, brown sugar, oil, salt, and chiles in a resealable plastic bag. Add chicken, squeeze air out and seal. Refrigerate 1-2 hrs., turning bag occasionally approx. every 15-20 min.
Preheat grill to med-high and oil grill. Now grill chicken about 6-8 min. per side until thoroughly cooked

A nice accompaniment to the chicken dish would be boiled potatos with butter, saffron and fresh parsley along with a fresh tomato and cucumber salad. A Chardonay would also go qutie well with this dish
