2 tbsp EVOO(Extra virgin Olive Oil)
1 large onion
2 cloves garlic
1 medium sweet potato-sliced into 1/4 inch rounds
2 1/2 cups low sodium chicken broth
1 1/4 cups of lentils-rinsed
Kosher salt and black pepper
1/4 cup Dijon mustard
1/4 cup dry white wine
1 cup chopped fresh tarragon

Directions:
Directions:
Heat 1 tbsp of oil in a saucepan over med. heat. Add onion and cook, stirring occasionally until softened, 5-6 min
Add garlic and sweet potato and cook for 1 min.. Add broth and lentils and simmer covered until lentils are tender-20-25 min. Season with salt and pepper.
Meanwhile, heat the remaining tablespoon of oil in a large skillet over med. heat. Season fish w/ salt and pepper and cook 4-5 min per side.
In a bowl, whisk mustard, wine, and tarragon. Drizzle over fish and lentils

Placing the fish on top of lentils and sweet potatos and then adding the tarragon mustard dressing makes a stunning presentation. Your guests will love it!
