Greens:
2 cups shredded purple cabbage
2 cups shredded green cabbage
4 scallions thinly sliced on the diagonal
1/4 cup cilantro (or mint) chopped
1 cup dried rice noodles

Dressing:
1 tbsp. white or black sesame seeds
3 tbsp. rice vinegar or cider vinegar
2 tbsp. sugar
1 tbsp. olive oil
1 tbsp. sesame oil
1/2 tsp. chili oil
Salt and freshly ground black pepper

Topping:
1/4 cup toasted slivered almonds
Sprigs of cilantro or mint

1. Combine all the greens in a large salad bowl
2. Combine all the dressing ingredients in a small bowl and mix well and then pour over the greens
3. Sprinkle the slivered almonds over the top and the sprigs of mint or cilantro.
5. Refrigerate for several hours to blend all the flavors
