3 cloves garlic
1 1/2 tsp kosher salt
1 1/2 tsp paprika
1 1/2 tsp ground coriander
1 1/2 tsp ground cumin
1/2 tsp cinnamon
1 tsp black pepper
1/2 tsp ground cloves
1-2 tbsp olive oil
5 tbsp teriaki sauce
3-4 tsp brown sugar
1 tsp of cayenne pepper
chopped bunch of fresh cilantro
2 1/2 lbs of skirt steak
1 doz. flour or corn tortillas
tomatos and scallions

Mince garlic and mash to paste with kosher salt. Stir spices together-then stir in garlic and oil until a paste forms. Pat steak dry, then rub all over with paste. Add cilantro, teriaki and marinate for a few hours. Bring steak to room temp. and simply barbecue on very hot grill. 4-6 min. per side.

When done, slice steak on board and place in soft tortilla rounds with scallions, tomatoes and even some salsa if you wish. A nice accompaniment would be a sweet potato salad and a side of arugula salad with lemon and olive oil
