2 c. flour, part wheat if desired
3/4 c. sugar
2 tsp. soda
1 1/2 tsp. cinnamon
1/2 tsp. salt
3 eggs
1/2 c. oil or applesauce
1/2 c. milk
1 1/2 tsp.vanilla
2 c. chopped, peeled apples
2 c. finely grated carrots
1/2 c. each coconut, raisins, and almonds (opt.)

Preheat oven to 375. Mix well, put into lined or greased muffin tins and bake 15-20 minutes.
