1/2 c. long-grain white rice
1 c. chopped cooked chicken
1 c. frozen whole kernel corn
1 can (10 oz) black beans, drained and rinsed
1 small onion chopped
1/4 c. chopped green chilies (half a 4 oz can)
2 tsp ground cumin
1/2 tsp chili powder
1/4 tsp salt
1/8 tsp pepper
5 oz shredded Monterey Jack/Cheddar cheese
2 c. salsa
12 flour tortillas

Directions:

1. Cook rice according to package instructions.
2. Combine chicken, corn, beans, onion, chilies, cumin, chili powder, salt pepper, 3/4 c. cheese, 1 c salsa, and cooked rice.
3. Heat oven to 375º. Coat 13x9x2 baking dish with nonstick cooking spray.
4. Spoon 1/2 c. chicken mixture across center of each tortilla. Fold up sides and overlap on top; place in single layer in prepared dish. Spoon remaining salsa over top. Sprinkle with remaining cheese. Cover.
5. Bake in 375º oven for 15 minutes. Increase temperature to 425º. Uncover and bake 10 minutes more.
