1 bag (16 oz.) California Blend vegetables, thawed & drained
1 can cream of mushroom soup
1/3 cup sour cream
1 cup (4 oz.) shredded Swiss cheese
1 can French Fried onions
Fresh ground pepper to taste
1 (4 oz.) jar chopped pimiento, drained (optional)


Directions:
Directions:
Preheat oven to 350º.
Combine veggies, soup, 1/2 cup cheese (or more), sour cream, pepper, pimiento and 1/2 can fried onions. Pour into casserole dish. Bake covered for 30 mins. Top with remaining cheese and onions; bake uncovered for 5 mins longer.

Microwave: Prepare as above. Cook covered on HI 8 mins; turn 1/2 way through. Top with remaining cheese and onions. Cook uncovered on HI 1 min till cheese melts.
