2 c. sugar 1 c. oil 4 eggs 1 c. buttermilk 2 c. mashed bananas (3-4 bananas) 1 tsp. vanilla 2 tsp. baking soda (mixed with 1 tsp. water) 4 c. flour 1 tsp. salt 1 c. nuts (optional)
Mix sugar and oil. Add eggs, buttermilk, bananas, vanilla, and soda. Mix well. Add flour and salt. Mix, then add nuts. Pour into 2 regular bread pans (or 3 small). Bake at 325° for 1 hour (or until toothpick comes out clean).
