2 pounds lean ground beef
1 cup chopped white onions
1 cup chopped celery
1 cup chopped sweet green peppers
Dry mustard (1/2 teaspoon or more to taste)
Salt, pepper, and cayenne pepper to taste
1 cup rice
2 cups water, and more as needed

Directions:
Directions:
Brown meat in a large heavy cast iron saucepan. Add half of the vegetables and all of the seasonings. Simmer 1 hour. Keep moist by adding water as needed. Add remaining vegetables. Continue to cook about 45 minutes, adding water as needed. Meanwhile, cook the rice with 2 cups of water until tender. Combine rice with meat mixture and serve.

This recipe is from the wife of the notorious Governor Edwin Edwards, famous for corruption, and still in prison in Louisiana. He is in bad health, and in his 80's.
