1/2 c chopped onion
1 clove garlic, minced
1 tablespoon vegetable oil
3 medium zucchini, sliced
4 cups chicken broth
one 16 oz canned stewed tomatoes, undrained
one 15 oz can tomato sauce
one 12 oz can whole kernel corn, undrained
one tsp ground cumin
1/2 tsp pepper
tortilla chips
1/2 cup (2 oz) shredded Monterey Jack cheese or Cheddar cheese

Directions:
Directions:
Sauté onion and garlic in oil. Add zucchini and next six ingredients; bring to a boil. Cover, reduce heat and simmer 15-20 minutes. Spoon soup in bowls, and add chips and cheese.
