1/2 cup unsalted butter
1 medfium onion, sliced
2 cloves garlic, minced
1 Tbsp dry basil
1/2 tsp crushed red pepper
8 chicken thighs, rinsed & patted dry
2 10oz pkgs frozen spinach, thawed
8 ounces linguine
1 cup grated Parmesan cheese
1 orange, unpeeled, quartered

Directions:
Directions:
Melt the butter and stir in the onion, garlic, basil and pepper. Preheat oven to 400º. Place chicken, skin side up, in a 10x15 rimmed baking pan. Pour butter mixture over the thighs. Bake, uncovered, for 45 minutes.
Drain and squeeze as much liquid from the spinach as you can. Cook the linguine, and drain it.
When chicken is done, remove from pan and keep warm. Add the spinach to the pan and stir to scrape any browned bits. Then add the cooked pasta and grated cheese. Mix well.
To serve: Mound a portion of the linguine on each of four plates. Flank with two chicken thighs and an orange wedge. Before eating, squeeze the orange over the pasta.
