1 1/2 c. solid pack pumpkin puree
1/2 c. butter, softened
1 c. white sugar
1 egg
1 tsp. vanilla extract
2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp.ground cinnamon

Frosting (see below)

1. Preheat oven to 350º. Line baking sheets with parchment paper.

2. Cream the butter or margarine with the sugar. Beat in the pumpkin, egg and vanilla.

3. Stir the flour, baking soda, baking powder, salt and ground cinnamon into the pumpkin mixture. Blend until combined.

4. Drop teaspoonfuls of dough onto the prepared baking sheets. Bake at 350 degrees for 12 to 14 minutes. Let cookies cool completely then sandwich two cookies together with frosting.

Vanilla Frosting:
1/2 c. shortening (Crisco)
1/2 c. butter
3/4 cup sugar
1 tsp. vanilla
3/4 c. milk
Beat the shortening and 1/2 c. butter together with electric mixer. Add sugar a little at a time. Slowly add milk and vanilla. Beat until creamy.

Whipped Cream Cheese Frosting:
1 (8 ounce) package cream cheese
1 cup white sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups heavy whipping cream...
In a small bowl beat whipping cream until stiff peaks form; set aside.
In a large bowl combine cream cheese, sugar, salt and vanilla. Beat until smooth, then fold in whipped cream.
