4-5 large yellow onions, sliced
4-5 fresh bay leaves or (2-3 dried)
1 bunch of fresh thyme
3 branches of fresh rosemary
6-8 large cloves of garlic, finely chopped
salt and white pepper
4-5 lb. beef brisket
2 C. organic beef broth

Directions:
Directions:
Using 1/2 of onions, spread in even layer in bottom of turkey roaster pan. Lay brisket on top of onions, fatty side up and smear garlic on top of brisket first. Then spread fresh herbs, salt and pepper and finish with top layer of onions. Pour broth around brisket, cover and bake at 250-275º for 3-4 hours depending on size of brisket. 3-4 lbs = 3 hours and 4-5 lbs = 4 hours. Slice brisket against grain for tender slices. Strain herbs, onions and fat from broth and whisk in arrowroot to thicken for a delicious genotype gravy.
