6 c. sliced potatoes 1 c. sliced onion 1 1/2 tsp. salt
3 T. butter 3 T. flour 1 1/2 c. milk 1/2 c. Old English cheese 1/8 tsp. pepper 1 tsp. salt
Boil potatoes, onion & salt ~10 minutes then drain. Pour in buttered casserole.
Heat butter in skillet then add flour (roux). Slowly add milk then add remaining ingredients. Mix until cheese is melted and mixture is well blended. Pour over casserole and bake at 400ºF 20-30 minutes.
