1 (10 pound) prime rib roast
10 cloves garlic minced
2 Tablespoons olive oil
2 tsp salt
2 tsp ground black pepper
2 tsp dried thyme

Directions:
Directions:
Place roast in roasting pan fatty side up. In small bowl, mix together the other ingredients. Spread the mixture over the fatty side of roast, let the roast sit out until it is at room temp, no longer than 1 hour.

Preheat oven to 500 degrees

Bake the roast for 20 minutes in the 500 degree oven, reduce temp to 325 and continue roasting for additional 60-75 minutes. The internal temp of roast should be at 145 degrees for medium rare.

Allow the roast to rest outside of oven for 10-15 minutes before carving so the meat can retain its juices.
