2 lb. pork tenderloin
1/2 c. olive or canola oil
1/2 tsp. dried thyme
4 cloves garlic (or less if desired)
2 tsp. dried, minced onion
3/4 tsp. dried rosemary, crushed
1 tsp. seasoned salt
1 tsp. coarsely ground pepper
1 tsp. ground mustard
2 lb. small red potatoes, quartered

Directions:

In a large bowl, combine spice ingredients and oil. Place the pork in a shallow 9 X 13 pan. Drizzle with 3/4 of the herb mixture. Add potatoes to rest of herb mixture and toss; place around pork. Bake uncovered at 375º for 50-55 minutes or until a meat thermometer reads 160º and potatoes are tender. Stir potatoes once or twice during baking. Let pork stand 5 minutes before slicing.
