8 medium potatoes, cut in 1 inch chunks
1 T. salt
16 oz. sour cream
1/4 real bacon bits
4 scallions, thinly sliced
4 oz. shredded cheddar
1/2 t. black pepper

Directions:
Directions:
Place potatoes in a large pot and add enough water to cover. Add salt and bring to a boil over high heat. Cook 10 to 15 minutes until fork-tender. Drain well and allow to cool slightly. In a large bowl, combine remaining ingredients and mix well. Add potatoes and mix until well combined. Serve warm or cover and chill until ready to serve.
