2 Cornish hens, split in half
1/4 cup red wine
3 Tbsp olive oil
2 cloves garlic, minced
2 tsp Dijon mustard
1/2 tsp dry rosemary
1/2 tsp sage
1/2 tsp thyme
1/4 tsp black pepper

Directions:
Directions:
Place the split hens skin side up, in one layer, in a large roasting pan. In a bowl, mix together the wine, olive oil, garlic, mustard, and the dry spices. Pour this mixture over the hens, and roast for 15 minutes, uncovered, in a 425º pre-heated oven.
Lower the temp to 350º, and roast for 45 minutes, basting every 15 minutes with the pan juices.
Serve with some of the pan juices spooned over top.
