3 eggs
1c oil
2 1/4c sugar
2c shredded zucchini
3tsp vanilla extract
1tsp salt
3tsp cinnamon
3c flour
1tsp baking soda
1/2tsp baking powder
1c finely chopped walnuts (optional)

Directions:
Directions:
Grease and flour 2 loaf pans

Preheat oven to 180C (350F)

Mix oil and sugar until well blended. Add eggs, cinnamon and vanilla and beat together well. Stir in zucchini. Add dry ingredients and stir well to mix all ingredients. Add nut to batter if desired.

Pour equally into 2 loaf pans.

Bake one hour or until tester inserted in middle of bread comes out clean.
