1 cup cooking oil
2 cups sugar
2 well beaten eggs
3 cups flour
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 teaspoons vanilla
2 large apples, peeled and chopped, about 3 cups

Combine oil and sugar. Add the beaten eggs. Sift together dry ingredients. Add dry ingredients to oil mixture. Add vanilla and chopped apples. Grease and flour loaf pans or a tube pan. Place batter in pan and bake in 300 oven for 55 minutes. Vary cooking time according to pans.
