2 lbs potatoes, peeled and chopped
1 lb leeks, washed and chopped
1 medium onion, chopped
1 medium carrot, chopped
1 stalk celery, chopped
5 c chicken broth or bouillon
1/2c milk
4T butter
2T parsley
salt and pepper tto taste
6T cream
1/2c shredded cheddar cheese
chives to top garnish

Directions:
Directions:
Melt butter in soup pot. Add potatoes, leeks, onion, celery and carrots. Stir cooking until onions are just starting to brown.

Add chicken broth and cover tightly. Cook until vegetables are very tender and potatoes are soft.

Mash vegetables in pot until smooth or use a food processor to puree.

Garnish with more grated cheddar cheese and chopped chives.

Serve hot

This is very good. More cheddar can be added to taste. Serve with tossed salad and crusty bread.
