1 8-lb. center cut pork loin, butterfly cut
3 sprigs fresh rosemary
1 T. Italian seasoning
4 cloves garlic, minced
1/2 c. mojo criollo marinating sauce
parsley

For Guava Glaze:
1 1/2 c. guava paste
1/2 c. fresh cilantro, chopped
3 T. butter

Directions:
Directions:
On the inside of the roast, place sprigs of rosemary and sprinkle with seasoning, garlic, mojo criollo and parsley. Tie with string and place on a rack in a shallow pan. Bake in a preheated 325-350º oven 30 minutes per pound. Baste with drippings occasionally. Make a glaze by sautéing guava paste and cilantro in butter until smooth. When roast has a crispy crust, spread the glaze on the top and bake an additional 10-15 minutes. Remove string and rosemary sprigs before slicing.
