1 pound deboned and skinned chicken breasts or cutlets
olive oil
1/2 cup low fat Italian salad dressing
1 cup bread crumbs
1/2 tsp each oregano, basil and parsley

Directions:
Directions:
If using whole chicken breasts slice them thin into cutlets. Pound the cutlets with a mallet to flatten. On a flat plate, mix bread crumbs and herbs.

Coat a cookie sheet lightly with olive oil.

Dip each cutlet into low fat Italian salad dressing and then into the bread crumb mixture, coating both sides. Place on cookie sheet.

Bake at 375º F for 7 minutes. Turn and bake for another 5 minutes. Or until chicken is cooked and bread crumbs are browned.
