3 cups fresh strawberries*
2 small boxes of sugar-free instant vanilla pudding mix**
1 large box of sugar-free strawberry flavored gelatin*
2 cups water
Whipped topping as desired

Directions:
Directions:
Rinse, hull, and slice strawberries*. Distribute evenly in a 12-in. pie pan (preferably a Longaberger Grandma Bonnie Pie Plate!).

In a medium saucepan, combine gelatin and hot water per package directions. After the gelatin is dissolved, using a wire whisk blend in pudding mix and blend well. Pour mixture over strawberries and refrigerate for 4-6 hours. MIXTURE SETS UP RAPIDLY!

Top with light or low fat frozen whipped topping prior to serving, if desired.

Keep leftovers refrigerated!

Yield: 8 servings (1 large pie)

* I’ve used a conglomeration of fruit (fresh and/or frozen) and gelatin/pudding flavors: Experiment, especially with fruit as it comes into season and use what your family likes!!

**The recipe I’ve adapted this from called for one (2.1 ounce) package of sugar-free cook and serve vanilla pudding mix, but I’ve never found it and so have just always substituted the instant pudding mix. Might not be as creamy, but for us it works Okay.
