1 1/3 c. shortening or butter
1 1/2 c. sugar
2 eggs
4 Tbsp. grated orange peel
1 c. orange juice
4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/2 c. dried cranberries

Directions:
Directions:
MIx shortening, sugar and eggs. Stir in orange juice and grated orange peel. Stir dry ingredients together and blend in. Drop on ungreased baking sheet and bake at 375 for 8-10 minutes. Cool completely then spread with frosting.

FROSTING: Combine 2 Tbsp. butter, 3 c. powdered sugar, 3 Tbsp. orange juice and 4 tsp. grated orange peel.

I use the rinds and juice from two large oranges, plus enough prepared orange juice to equal the amounts in recipe.
