Piecrust (or use prepared crust):
2 cups all-purpose or unbleached flour
3/4 tsp. salt
6 T. shortening
5-7 T. ice water

Pie filling:
5 Large apples (tart ones, like Granny Smith are best)
1/3 cup sugar
1/3 cup brown sugar
2 T. flour
1/2 tsp. ground cinnamon
4 T. butter or margarine
1 T. Lemon juice

Directions:
To make piecrust, measure four into bowl and add salt. Mix thoroughly. Cut shortening into chunks and distribute evenly over flour mixture. Using a pastry blender, cut shortening into flour until mixture resembles coarse meal. Sprinkle 5 T. of ice water onto mixture and toss lightly with a fork. If the mixture looks dry, add water one tablespoon at a time until mixture holds together. Do not overmix, as the crust will become tough. You want to make sure it is moist and holds together. Form into a ball and cut in half. Roll out each half on a floured surface. Place one circle into a 9" piepan. Fill with apple mixture. Carefully fold other piecrust circle into fourths. Cut 1" slashes along each side, place over filling and unfold carefully. Tuck under the overhang around the piepan and flute edges. Cover edges with strips of foil before baking to prevent premature browning.

Peel, core and slice apples into a bowl. sprinkle with flour, sugars, cinnamon and lemon juice. Mix thoroughly. Cover and microwave on high 6-8 minutes. Stir filling and allow to cool before pouring into prepared crust. Top with scored crust or cut dough into strips and make a lattice top. Bake in 375 degree oven for 45-50 minutes until crust is light brown and filling is bubbly.
