3 lbs. squash - Acorn and Butternut
1 1/2 lbs. onions, chopped
3 large carrots, thinly sliced
1 box (10 oz) frozen kale or spinach, drained and squeezed dry
1 1/2 cups (6 oz) Swiss cheese, shredded
1/2 cup Parmesan cheese, grated
1 cup chicken or vegetable broth
1/2 tsp. salt and 1/4 tsp. pepper, mixed
2 T butter or margarine

Grease a 2 1/2 to 3 quart casserole. Cook squash, scoop out and remove seeds, and cut into small chunks. In a skillet, sauté onion in the 2 T butter and sprinkle with 1/4 tsp. of the salt/pepper mixture. Stir in the sliced carrots and cook for 5 minutes.
Layer ingredients in baking dish as follows: 1/3 squash, 1/4 tsp. salt/pepper mixture, 1/2 of kale, 3/4 cup Swiss cheese, 1/2 carrot mixture, and 3 T Parmesan cheese. Repeat layers once and top with remaining squash. Pour broth over all and sprinkle with any remaining salt/pepper mixture. Cover with foil and bake 45 minutes at 375. Uncover and sprinkle with remaining Parmesan cheese. Bake 15 more minutes. Let stand about 15 minutes before serving.
