4-5 med. size potatoes peeled and sliced in rounds 1/4" thickness,
1 small onion,
1-2 garlic cloves mashed,
1 Cup cubed sharp cheddar cheese,
1 8 0z can tomato sauce,
2 Cups water or broth,
Olive Oil,
salt to personal taste.
pepper to personal taste,

Directions:
Enougn olive oil in large skillet to saute onion and garlic..add potatoes and contiue to fry until potatoes onions and garlic are combined. (add small amount added oil if necessary) So that potatoes don't stick to the pan. Add tomato sauce and water, salt and pepper
Stir in pan till all well combined.
Cook covered until potatoes are tender enough to pierce with fork and not mushy.
Add small amounts of additional water or broth if necessary. The potatoes should have enough fluids to simmer.
Remove potatoes from heat and add cubed cheese
just before serving. Gently toss cheese throughout
cooked potatoes. Additional cheese can be added if you prefer extra cheesy potatoes.

When I was a child, my Mom would always prepare our favorite dish for our respective birthdays. This was one of mine. I loved the way the cheese would be stringy and almost melted and the potatoes cooked just right. This dish and a salad and I was in heaven. Simple, easy and good.
