1 1/4 cup boiling water
1 cup quick cooking rolled oats
1 stick butter
1 cup dark brown sugar, packed
2 eggs
1 teaspoon vanilla
1 1/3 cup sifted plain flour
1 teaspoon soda
1 teaspoon cinnamon
1 cup white sugar

Topping:
3 Tablespoons butter
2/3 cup dark brown sugar, packed
1 three ounce can or 1 cup shredded or flaked coconut
1 cup chopped nuts
4 Tablespoons cream
1 egg or 2 egg yolks

Oatmeal Cake:
Pour boiling water over oats and let stand for 20 minutes. Cream sugar and butter by hand or on slow speed of mixer. Add unbeaten eggs and vanilla. Mix well, and add oats mixture and combined flour, soda and cinnamon. Mix well, and bake in a greased 9 x 13 inch pan for 25 minutes at 350º. Check in 20 minutes.


Topping:
While cake is baking, combine butter, brown sugar, coconut, nuts, cream and egg. Mix well, and spread over hot cake. This amount will barely cover. Return to oven for ten minutes.
