Boneless chicken breast 4 - 6.
One 12 oz. jar of "Lavational" Green Salsa "JALAPEÑO" EXTRA HOT
One 12 oz. jar of Chicken Stock.
Two 12 oz. cans of diced tomatoes.
Let it cook all day on high.

Directions:
Put all ingredients in crock pot.
Cook on high.
After 8 hours, stir the chicken until it is shredded (use a potato masher if needed).
Add 1.5 cups cooking rice. Stir.
Add more water if needed. The rice will absorb the liquid so it should be very soupy. (Make sure there is plenty of liquid and all the rice is at bottom in the liquid).
Cook 1 more hour on high.

Sprinkle a little cheese over the chicken & rice when you serve.
Serve with some hot buttered corn & a side salad.

I threw this together when I was running out the door one morning. Sometimes it’s the quick & simple things we do that turn out great.
You can anything you want to this recipe and it'll probably be good... but it is really good just the way it is...

This was a bit hit in my family.  =)
