2 cups uncooked whole grain elbow macaroni
1 Tablespoon olive oil
1 cup diced fresh or canned tomatoes, drained
1 1/2 cups low-fat grated sharp cheddar cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon paprika
salt and pepper to taste

Directions:
Directions:
Prepare macaroni al dente. Grate the cheese. Saute the tomatoes in olive oil for 3-5 minutes. When the macaroni is done, drain but do not rinse. Put macaroni and cheese in the skillet with the tomatoes. Stir to mix.
Cook over low-medium heat 3-5 minutes till the cheese is melted. Sprinkle with Parmesan cheese and paprika and cook a bit longer until the edges of the dish brown a bit. Serve from pan.
