2 16 oz. cans peas, drained or 1 can peas and 1 can corn
1/2 cup chopped celery
3/4 cup chopped green pepper, optional
1 cup chopped onion
3 tbsp. pimento, chopped
1 lb. cheddar cheese, cubed, optional
1/2 cup unsalted peanuts, optional

Dressing:
3/4 cup sugar (may use less) or 6 pkgs. Equal
1/2 cup vinegar
1/2 cup oil, optional
1 tsp. salt
2 tbsp. water
1/2 tsp. pepper

Directions:
Directions:
Put vegetables in a large bowl. Mix together the dressing ingredients and pour over vegetables and cheese. Marinate all day or overnight.
Make at least 8 hours ahead
