1lb. of dried back beans
1 cup of onions, chopped
1 tablespoon of butter
4 cups of water
1 beef bouillon
12 ounces of cooked lean ham, cut into 4 to 6 chunks
2 bay leaves
1/2 teaspoon of dried leaf oregano
1/2 teaspoon of salt
1 dried whole red pepper
1 cup of green bell pepper, chopped

Sort and soak beans overnight. Drain and discard the water used for soaking. In a 4 quart pot saute onion in butter until tender but not browned. Add soaked beans, 4 cups of water, bouillon cube, ham, bay leaves, thyme, oregano, salt, and red pepper. Bring to a boil; once boiled reduce heat. Cover and simmer 1 to 1-1/2 hours or until beans are tender. Remove 1 cup of beans from stew. Mash in a bowl with a potato masher or fork. Add mashed beans to stew; stir to thicken. Remove ham, and dice. Remove bay leaves and red pepper, and discard them. Add diced meat and green peppers to beans. Cover and simmer for 15 minutes. Ready to serve.
