1 bag Yukon gold potatoes, peeled and cut in half
2 qtrs water
2 buillion cubes (I use beef)
bunch of leeks, white bottoms washed, sliced
1 small onion, sliced
2 TBS olive oil
1 TBS butter
S and P, to taste
1 cup milk (I use skim)

Directions:
Directions:
Heat oil and butter in stockpot, saute leeks and onions until transparent; add water, potatoes, buillion, S&P, cook until potatoes are soft.

Mash right in soup pot with a masher; then blend with an immersion blender. Add milk, blend again.

If soup is too thick, thin with more milk or more buillion broth. Adjust S and P to taste.
