1/2 lb. of ground Colombian sausage, cut into pieces
1-1/2 lb. of beef stew meat, cut into pieces
2 large onions, chopped
2 large green peppers, chopped
3 tablespoons of chili powder
1 tablespoon of instant beef bouillon
1 teaspoon of ground cumin
1 teaspoon of dried oregano
2 cans (28 oz) of cut tomatoes
6 cups of water
1 cup of dry lentils

In a 6 quart Dutch oven or kettle, cook sausage until it through cooked. Remove sausage; drain the fat. Add beef, onions, and green peppers into the Dutch oven. Cook until onion is tender. Stir sausage, chili powder, beef bouillon, cumin, and oregano. Cook and stir for 1 minute. Add tomatoes and water. Bring to boil; once boiled reduce heat. Cover and simmer for 1 hour. Rinse lentils. Add lentils into meat mixture. Bring to a boil; once boiled reduce heat. Cover and simmer for 2 hours or until lentils are tender. Served into bowls with shredded cheese on top.
