3 Large Idaho Potatoes, peeled
3 Large Sweet Onions
1 Package Cheddar Cheese, shredded
6 to 8 Large Pork Chops
Salt
Pepper
1/2 Stick of Butter
1 Pint of Half and Half
1 Jar of Pimientos

DIRECTIONS:

Preheat oven to 325F. Grease large casserole with butter. Slice Potatoes and onions very thin. Layer the bottom of the casserole with potatoes. Cover with onions and the follow with potatoes (follow this until dish is filled nearly to the top). As you layer, add salt and pepper. Use one or two layers of cheddar cheese as you build up the potatoes and onions. Place pork chops on top. Add half and half, but not so much to boil over. Bake until potatoes are as you like them. Garnish on top with pimentos.
