½ cup sundried tomatoes 1 lb. silken Tofu 1 clove garlic 3 T. lemon juice ¼ cup fresh basil salt to taste
Rehydrate the sundried tomatoes by plumping them in hot water – drain. Place tomatoes, tofu, garlic, lemon juice, and basil in food processor. Blend until creamy. Season with salt. Serve with crackers or raw veggies.
