1 3/4 c. flour
1/4 c. sugar 2 1/2 tsp. baking powder
3/4 tsp. salt
1 well beaten egg
3/4 c. milk
1/3 c. oil
1 c. fresh blueberries
2 Tbsp. sugar
1 tsp. graated lemon peel

Directions:
Directions:
Stir together teh first 4 ingred. Combine egg, milk and oil. Add all at once to dry mixture.Stir until just moistened. Combine blueberries and 2 Tbsp. sugar. Fold into batter along w/ lemon peel. Fill well greased or paper lined muffin pan. Bake @ 400 for 20-25 min.
